A lot will depend on how you "camp" and why
We are "sight seers"; we don't spend a lot of time sitting around and in our 210WBS unless we are back for the evening or it is pouring down rain. We tend to come back from hiking, biking or otherwise "seeing the countryside", tired and ready to relax. The couch, for us, is far more desirable than a dinette for relaxing. We have television trays that fold up into squares and store behind the couch for eating inside if it is nasty outside, and the television trays adjust up and down and the top tilts for laptop computer use, so, the floor space is always "open". We too, didn't care for the table that comes with the WBS, it is now in the wife's dye kitchen
I put our television on a MorRyde swing mount on the wall and it pivots out, almost to the refrigerator, for easier viewing from the couch and/or the bed simultaneously (she likes lounging on the bed, I sit on the couch with the cats).
The couch does turn into a sleeper, but, I wouldn't put more than one person on it. If you have children, the dinette would make a better bed for a couple of kids and the dinette would be better if you spend time inside playing cards or board games... For us, we prefer no dinette and having the couch; in fact, that was what originally sold us on the FunFinder X line. We took one look at the interior and it was love at first sight.
