This is our first caravan which we have bought privately. The previous owner didn't really get time to show me how everything works on these things and there aren't any manuals with it.
My question is this. When I fill the clear (drinking) tank, will the shower (which will only be used in emergency) draw its water from the clear water tank and drain into the grey water tank? And will the toilet draw water from the clear water tank and then drain into the black water tank?

And you have it correct. The only thing going into the black tank is the toilet. Every other drain/shower/sink in the system goes into the grey water.
Although I believe that some older years had the shower also going to the black tank.
